Temperatur<\/strong><\/h4>\n\n\n\n<p>Die Sollwerttemperatur liegt vorzugsweise in einem Bereich von 160\u2013175 \u00b0C (320 \u00b0F\u2013347 \u00b0F). H\u00f6here Temperaturen bedeuten nicht k\u00fcrzere Garzeiten, sondern beschleunigen den Alterungsprozess des Frittier\u00f6ls (und die Bildung von Acrylamid in st\u00e4rkehaltigen Lebensmitteln).<\/p>\n\n\n\n<p>Die Temperaturregulierung sollte regelm\u00e4\u00dfig mit einem Au\u00dfenthermometer auf Genauigkeit \u00fcberpr\u00fcft und die Temperaturen im Rahmen eines HACCP-Konzeptes dokumentiert werden.<\/p>\n\n\n\n<p><strong>\u00dcberf\u00fcllen Sie nicht die Frittierk\u00f6rbe<\/strong>, um einen starken Temperaturabfall zu Beginn des Frittiervorganges zu vermeiden. Moderne Fritteusen mit elektronischer oder Computersteuerung verf\u00fcgen \u00fcber ein entsprechendes Temperaturregelsystem, das schnell auf Temperatur\u00e4nderungen reagiert.
