Er beinhaltet mehrere chemische und physikalische Reaktionen zwischen dem Frittiermedium (\u00d6l) und dem Produkt.<\/p>\n<p>Beim Frittieren kommt es zu physikalischen Ver\u00e4nderungen, wie zum Beispiel der \u00dcbertragung von W\u00e4rme von den Heizelementen auf das Frittier\u00f6l und somit vom \u00d6l auf die Lebensmittel. Hitze f\u00fchrt dazu, dass Wasser in den Lebensmitteln verdunstet und mit dem Bratmedium reagiert.<\/p>\n<p>Dar\u00fcber hinaus finden verschiedene chemische Reaktionen zwischen Lebensmitteln, Frittiermedium und Luft statt. Oxidationsnebenprodukte sind unter anderem Hydroperoxide, Ketone und Dimere. Polymere erh\u00f6hen die Viskosit\u00e4t des Frittier\u00f6ls und verursachen Schaumbildung. Im Extremfall bildet sich ein gelber Lack auf den Bratheizk\u00f6rpern und der Wannenwand. Es verursacht einen bitteren Geschmack und erh\u00f6ht die Aufnahme von Frittier\u00f6l im frittierten Produkt.<\/p>\n\n\n\n<p><\/p>\n<\/div><\/div>\n\n\n<hr>\n\n\n<div style=\"height:33px\" aria-hidden=\"true\" class=\"wp-block-spacer advgb-dyn-58c5e9c9\"><\/div>\n\n\n\n<p>Oxidations-, Hydrolyse- und Polymerisationsnebenprodukte gelten als polare Substanzen, die als gesamte polare Materialien oder Komponenten (TPM oder TPC) gemessen werden k\u00f6nnen.
